Israeli Breakfast Salad

2 medium cucumbers, peeled and seeded
1/2 cup crumbled feta cheese
1/4 red onion or green onions
1 green pepper, seeded and chopped finely
1/4 cup lemon juice
1/4 cup olive oil
1/2 tsp or to taste salt
1/2 tsp or to taste cracked black pepper
1/4 cup chopped fresh mint or cilantro (optional)

Put it all in a bowl and serve with toast, left over challah, boiled eggs or grapefruit halves.

This is one of Ber’s recipes…..I can’t wait to try it. I make one similar which is cucumbers,onions,diced tomatoes but mixed with ranch…I think I will try this one with her recipe.

I thought I was putting this in the Recipe page….but it didn’t work that way…Okay…I need to go back and read the instructions again…..
